A tribute to discontinued cereals

Those of you that know me know that I had a long time love affair with cereal. I still cheat and have some once in a while. I found this awesome site that reminded me of the cold cereal days. Oh did I ever mention I took second in a cereal eating contest eating a little over 13 bowls of a variety of cereals. Should I keep that to myself? ha ha!

FOOT JUICE/ Rejuvelac

A home made probiotic full of enzymes that costs cents to make! Everything this I read says its good for you, and I can feel it doing it's job in my body. So why not give it a try. LOOK UNDER " weird stuff I do " to find the recipe.


I'm not going to bore you with a long blog post about enzymes, I will give you the low down on why you need to eat more raw foods, and why a diet high in processed foods is making you sick inside cause you are missing out on these little buggers! (enzymes)

Enyzmes are involved in nearly EVERY chemical reaction in our bodies. Without enzymes we would not be able to digest our food properly! AND we coudln't take full advantage of vitamins and minerals from our food. Basically they are important and here's what you need to know....
What foods have enzymes??? RAW FOODS!!!

If you picked an apple right off a tree, cut it in half and looked at it under a microscope you would see tiny little pockets, thats where the enzymes live.

If an apple fell off a tree onto the hard ground it would bruise, that bruise broke open those little enzyme pockets....the result? well have you ever picked an apple off the ground and found it all rotten on the bottom. Well those enzymes started doing their job, they started digesting and breaking down that apple. Thats what they do in our bodies.

When you cook foods you can destroy the enzymes in them. Raw foodists will tell you NEVER cook your food except for at very low tempratures.

+ interesting little tid bit of information....
If you put your hand in 117 degree liquid it would be hot but not burn you,
if you put your hand in 119 degree liquid it would feel TOO HOT to the touch and would feel a burning sensation.

Well, it's been shown that in 118 degrees, enzymes start to die, so the food isn't as healthy for us.

We NEED enzymes, The focus this week is to eat more raw fruits and veggies. We've always tried to eat food in it's whole form, well heres just another reason to get your 5 servings of veggies in for the day.

Triple Layer Raw Protein Brownies

Bottom brownie cake layer

1/2 cup any nut flour/meal (we used ground cashews)

1/3-1/2 cup hemp seeds

2 teaspoons vanilla

pinch sea salt

1/2 cup + 2 tablespoons cocoa (we used raw cacao because we just love it)

2-3 tablespoons xylitol or coconut sugar**

2-3 tablespoons water

Protein Frosting Layer – we like to call it our sludge

1 scoop Vega performance protein powder (you could use any protein powder of your liking, we would say it is about 1/4 cup worth of protein, maybe)

4-5 tablespoons water*

1/8 teaspoon flavoring of choice – optional – we did 1/8 tsp peppermint extract

Next make your avocado mousse layer

1 avocado

1 medium-large banana

1/2-3/4 teaspoons flavoring of choice – again we used peppermint extract

2 tablespoons coconut oil

**can add in a little lemon juice to help prevent the avocado from browning.


Bottom brownie cake layer

**for those that want to use a liquid sweetener like agave nectar or maple syrup or honey please omit the water. and adjust taste accordingly. plus the 2 tablespoons of cocoa can be optional, we just wanted a rich chocolate flavor.

place your nut flour (ground nuts of any sorts) and hemp seeds in a food processor (or blender would work) along with your vanilla, sea salt, cocoa powder, and sugar of choice. begin to pulse till combined. texture will be a light brownie cake like texture. not too wet but not too dry.

take your brownie cake layer and press into your pan. we used our favorite mini cheesecake pan, but you could use a 8 or 9 inch cake square or circle pan. begin to press cake batter into pan. set aside.

Protein Frosting Layer – we like to call it our sludge

place protein powder in a cup, add in your flavoring if desired. then slowly add in your water. * REPEAT – to do this slowly! as you want a fairly thick consistency for it.

then place your protein frosting on top of your brownie cake layer. you will have to use a spoon or spatula for this part to help spread it over the brownie.

Next make your avocado mousse layer

place avocado, banana, flavoring and coconut oil into your blender or food processor and pulse till smooth and creamy. you may set your avocado mousse in fridge for about 5 minutes if you would like. sometimes that helps with building it, without it being too soft.

then you just start layering your avocado mousse layer on top of your other two layers. set in freezer for about 2-3 hours to set. bring out of freezer and let come to warm temperature for about 5-10 minutes. and enjoy!

Things to shoot for

Remember our focus these last few weeks.
Sugar; cutting back on packaged foods, sweet treats, juice,even extra helping of fruit, will no doubt help you lose pounds and inches. Sugar is toxic and we eat WAY more than our body needs. I try and limit my fruits to about 2 a day, and it's recomended that we consume only about 100-150 calories of ADDED sugars. So pick and choose, you can't have that sugared yogurt AND that sugary doughnut in one day. Try to make those little cuts, you'll save calories and save your body from all that sugar.
To help you figure out how much added sugars are in a certain food here are the numbers...
4 grams of sugar is about 1 tsp
1 tsp is about 15 calories

SO if your sugary cereal has 12 grams of sugar....that's 3 tsp of added sugar which 3 tsp times 15 is 45 calories! so right there you have 45 of your 100 calories of added sugar for the day.

Check and see if you have fluffy floaties or stinky know what I mean. :)
if they are stinky need more fiber.
shoot for 25-38 grams a day!
Don't eat carbs without fiber! that is a HUGE mistake in our country.

If you haven't gotten on a online food tracking website yet DO IT!! it will help you sooo much in your weight loss journey. I promise.

Black Bean Salad with Corn, Red Peppers, Avocado & Lime-Cilantro Vinaigrette
2 15-ounce can black beans, rinsed and drained
3 ears fresh corn, cooked, cooled and kernels cut off the cob
2 red bell peppers, diced
2 cloves garlic, minced
2 tablespoons minced shallots (you’ll need one medium shallot)
2 teaspoons salt
¼ teaspoon cayenne pepper
2 tablespoons sugar
9 tablespoons extra virgin olive oil (I like Colavita)
6 tablespoons fresh lime juice
1 teaspoon lime zest (be sure to zest limes before juicing them)
½ cup chopped cilantro, plus more to garnish
2 Hass avocados, diced
1.Combine all ingredients except avocados in a large bowl and mix well. Cover and chill for a few hours or overnight. Right before serving, add avocados and mix gently, being careful not to mash avocados. Garnish with a few sprigs of freshly chopped cilantro if desired. Serve at room temperature.

Slim Down for Summer Challenge!!

If shorts, tank tops and swim suits aren't motivation enough than come join in the Lose it!! summer challenge. Starting THIS week (if you miss this week you can still join in anytime! don't worry) It's time for a little friendly competition to get healthy.

Slim down challenge goes from April to June
There will be PRIZES and a Barbeque at the end of the challenge to celebrate our awesomeness
You must attend AT LEAST two lose it! classes to be eligible for prizes and barbeque.
If you can't make it to regular classes you can check in with me via email
you can also weigh in at Elizabeth St. Y with a fitness coach or other employee.
